Apricot Glazed Chicken

Serves 4


  • 1 cup apricot preserves
  • 1/3 cup orange or pineapple juice
  • 2 Tablespoons olive oil
  • 4 boneless, skinless chicken breast

Instructions: Pre-heat oven to 350 F. Mix together apricot preserves, juice and olive oil. Place the chicken in a glass baking dish and cover with marinade. Cover baking dish with aluminum foil and bake for 45-50 minutes or until meat thermometer reads 165.
