Yum! I made this with Coconut Butter (not oil) and it turned out great. I used a little less than a Tbsp raw honey and 1/4 tsp vanilla to sweeten. I was actually staring at my pantry feeling the urge to make cookie dough, but thought better of it and decided to try a "healthy" option to get my sweet fix. Glad I did (: Just a couple spoonfuls of this fudge and I'm totally satisfied AND my blood sugar did not go on a roller coaster ride. Rolled the rest of the fudge into little bite-sized balls coated them with unsweetened coconut - stuck them in the fridge for the next time I'm feeling the need for something "naughty".
