{Recipe} Chicken Apple Bacon Hash

So you’ve sworn of cereal, pancakes and waffles or maybe even grain in general for that matter.

Good for you. However, that leaves fewer choices when it comes to breakfast. There’s only so much you can do with eggs and let’s face it, it’s probably not a great idea to eat eggs every single day anyway. You also firmly believe that certain foods have their rightful place during a particular time of day. You’re not quite ready to make the leap and have dinner food where your breakfast food should be. I understand. I’ve been there.

Well here’s a breakfast idea that might help bridge the gap, keep things interesting and maybe even utilize some of last nights leftovers.

Chicken Apple Bacon Hash


3-4 Free-range chicken thighs (or chicken breasts, whatever floats your boat)

1 Large organic apple

4 Slices pasture raised bacon

Salt and Pepper


This is about as easy as it gets. If you have some chicken leftover from last nigh’s dinner, it’s even easier.

Start by cutting up your bacon into about 1 inch pieces. Then chop up the chicken. Finally, dice up your apple. Throwyour bacon in a heated pan and when you start getting a little bacon grease, you can add the chicken. Let that warm up for a minute and add the apple. Season with a little salt and pepper to taste and give it a few turns every now and then.

This should only take a few minutes to cook.

Once the chicken is cooked and the apples are tender you’re ready to eat. If your chicken is already cooked from dinner last night, just add that last so it gets just enough time to heat up but not over cook. That’s it! Easy enough right? The sweet and salty flavor along with the savory and healthy fat from the pastured bacon make this incredibly satisfying.
