Try this recipe for pumpkin pie squares. They totally satisfy the desire for pumpkin pie. They are a good balance of protein, fat and carbs and most of all they are so good!
- 4 eggs
- 4 ounces cream cheese
- 4 tablespoons sugar
- 1 15oz can of pumpkin
- 1 tsp vanilla extract
- 1 Tbs. pumpkin pie spice
Blend all of the ingredients in a large bowl with a hand blender or mixer. OR put all ingredients in a blender and blend until smooth. Pour into a nine inch pie dish or a pour into a 1 quart rectangular baking dish.
Bake at 375 for 30 minutes or until it tests done with a clean knife.
Enjoy as a dessert with vanilla ice cream or for breakfast with a little butter, fruit and cottage cheese.
